Slow Cooker Pork Ribs

I am looking forward to the New Year. How about you? However, I only have one more day to come up with some fabulous New Year's Resolution that I tend to forget several months in. There are only two that have ever really stuck. Four years ago, when I was pregnant with my first son, I started a journal to document my pregnancy. I write in it every so often still so I can remember the boys silly sayings and just fun family times. The only other New Year's Resolution that stayed in effect, was cooking new foods. I try new recipes all the time. It has paid off over the years and I have found a lot of new favorites. Here is one of them...

Slow Cooker Ribs


Ingredients:

4 lbs pork ribs
1/2 cup packed brown sugar
1 cup ketchup
4 tbsp vinegar
2 tsp oregano
2 tsp Worcestershire
1 tsp garlic powder
1 cup barbecue sauce
1 cup sweet chili sauce (the secret ingredient)

Directions:

1. Preheat oven to 400 degrees. Line baking sheet with foil. Season both sides ribs with salt and pepper. Bake for 15 minutes on each side. Remove from oven.


2. Place in crock pot. Mix above ingredients in small bowl for sauce. Pour sauce over ribs in crock pot and turn to coat.


3.  Cover and cook on low for 4-6 hours. It only took me 4 hours which was quite a surprise. They were so tender I could not even take them out of the crock pot without some of the rib meat falling off the bone.

  1. I cooked pork country style ribs on Saturday nite in my big crock pot, woke up Sunday morning and mine were done! Man, I had to have a spoon to get them out of the pot. They melted in your mouth! Then when I read your journal today I see you had a recipe for them! Yummy!
    I also wrote in journals when I found out I was pregnant with each of my two kids. I started the moment I found out and kept it up through the years. I'd also cut little clippings out (unusual predictions etc)and stick them in the pages according to date. When my son (my oldest) graduated from high school, I gave him his journal. We had a huge Texas party with BBQ and tons of people. Infront of everyone, he opened it, saw what it was and started crying. It was a total surprise. I'd write in them at nite after the kids went to bed so they never knew what I was doing. Of course when my daughter graduated 5 years later, she knew her's was coming. It's such a personal valuable gift to them. Things we normally would forget wouldn't be forgotten. I plan to do one for my grandkids .. if I ever get any! My kids are 32 and 28 and they told me at Christmas they still go back every now and then and read their journals.
