For those of you that don't know, I live in Texas, and it is already in the 90's here. Our air conditioning is on full blast and I am dreading next months electric bill already. Summer thoughts of lazy days and activities for the kids are on my mind. Today I wanted to share a unique child's treat for a hot summer day. It is an easy, fun, and fairly nutritious snack. My kids enjoy helping make melon boats and they enjoy eating them even more!
Ingredients:
1 melon (cantaloupe, honeydew, or small seedless watermelon)
2 (3 oz) packages of flavored gelatin
1 cup boiling water
1/2 cup applesauce
1 cup sliced fresh fruit
Directions:
Begin by cutting your melon in half and carefully scooping out the seeds. Shave a thin slice off the bottom of the melon so it will sit flat during preparation.
Dissolve gelatin in boiling water and then stir in the applesauce and fresh fruit. Divide the gelatin mixture equally into both melon halves.

Cover with plastic wrap and refrigerate overnight. Cut into slices just before serving.

Place in Fridge |

Slice into pieces and enjoy |

I packed these for our picnic in saran wrap and they were still in perfect shape 2 hours later. |
