"Cupcake" Sandwich and Father's Day Ideas

My two year old is so busy and on the go that it is getting hard to get him to eat some meals right now. We sit down for dinner every night and sometimes he can go 30 minutes without even taking a bite. (I wish I had that kind of will power!) However, he is never too busy to ask for sweet treats if they are around. I almost tricked him on this one...it is a sandwich disguised as a cupcake.

Doesn't it look at least somewhat real? I am definitely sending these fun sandwiches in the boys lunch boxes next year.

Ingredients:

White bread (wheat just looked more fake)

Peanut butter or meat and cheese

"Cherry on top" (I used a skittle)

Saran wrap

Cupcake Wrapper

Directions:

1. Take a slice of bread and place it on a piece of saran wrap. Top it with either peanut butter or meat and cheese. You may cut off the crust but I chose not to.

 

2. Fold up the four corners of the bread together.

3. "Bundle" it up into a ball shape. This step is hard to describe so hopefully the picture helps.

 

4. Place it in your cupcake wrapper and top it with a cherry skittle.

5. See if you can fool your child, or at least make them smile enough to enjoy it!!

 

Father's Day is just a few days away. I have not finished my gift yet, so I can only share some ideas from the past right now.

Googly Eye Utensils and Halloween Lunch

My son is very interested and intrigued by monsters, ghosts, mummy's and goblins right now. I am just happy he is not scared of them at three years old. He decided that it would be fun to bring a "spooky" Halloween lunch to school. It was a perfect activity for us. Our adventure began with some monster (googly eye) utensils. We just hot glued googly eyes of different sizes on some spoons and forks. These googly eye utensils would be perfect for a Halloween or monster birthday party.

Next, we cut out sandwich's with Halloween cookie cutters. It may seem like the same old boring idea to us as parents, but I can assure you, our kids still thinks it is creative and fun. The treasure is in the eye of the beholder.

We took a container of Mandarin oranges, and dressed it up like a Jack-O-Lantern, with a pair of eyes, a nose, and a mouth.

I had saved a milk carton from Chick-fil-A and we hot-glued googly eyes on it too. My son still loves milk and brings it to school every day. I covered a small box of raisins in orange striped paper and the googly eyes did their work again. I am not sure what it is about googly eyes... but they look silly on anything!

For desert, I cut a bat out of black paper and attached a Hershey bar for a treat. I think these would be fun for trick or treaters or Halloween class favors.

Here...is our spooky, scary, and haunted lunchbox. If I would have thought of it sooner, I would have packed everything in a plastic orange pumpkin. A lunch box, is truly anything you want it to be. Never be afraid to be creative!

Carve Fun Watermelon Creations

Throughout the summer I have watched the fun watermelon designs and creations that have been popping up around blog land. I was about to cut our watermelon the other day and decided it would be a lot more fun if I made a design. My son's friend was coming over to play, and his favorite character is Lightning McQueen. I made a simple version, and it was a big hit with the boys. My son insisted we set it on our lunch table so he could look at it while he ate.

I found that a melon baller worked best to scrape off the watermelon skin for designs. With only light pressure it peeled right away. I personally had no luck with a vegetable peeler or a knife. You can see in the picture below how I took off an extra chunk with the knife. Oops!

I inserted toothpicks and stuck them in small chocolate pieces for the eyes.

I highlighted the lightning bolt with a black sharpie and wrote the number 95. I know lazy...but it was not like a was entering a watermelon carving contest. I was doing it for the pure enjoyment of my son.

He loved his Lightning McQueen.

Make Your Own Ice Cream Cookie Sandwich Maker

Hot Weather + Summer = Ice Cream Time

I am sure you have seen all the fancy ice cream cookie sandwich makers available on the market. We love ice cream sandwiches made with cookies but I did not feel like paying $8-$15 for a contraption. I came up with my own version for under $1.50. We made these out of Reese's Peanut Butter Cup cookies today and they were delicious as always.

Ingredients:

Cookies

Ice Cream

2 " PVC Coupling (54 cents at Lowe's)

2" Test Cap (68 cents at Lowe's)

Ice Cream Cookie Sandwich Maker out of PVC

Directions:

1. Lay one cookie top side down and add a scoop of ice cream

2. Place second cookie on top

3. Place test cap on PVC coupling

4. Fit over cookie combination

5. Gently press down with your finger

6. Enjoy Delicious Ice Cream Sandwiches!

Tip: I like to make up a bunch of ice cream cookie sandwiches at once. I place them in a Ziploc bag in the freezer for easy summer treats.
